Chicken in sauce

Can people throw some ideas/recipes at me for chicken in a sauce that can be served with rice/potato or something. It has to be child friendly as I’m trying to get my two young DD’s to eat chicken more...

Chicken korma or some sort of curry is a no go as one of them is very fussy & won’t even entertain curry.

Chicken in Tomato and Marscapone sauce. Delicious, mild and creamy. Can be spiced up a bit for the grown ups with garlic and chilli.

Italian style chicken - with tomato ragu and pasta? Or new potatoes?

Honey and garlic chicken? Chicken thighs, ketchup, honey, garlic, soy sauce and herbs in the slow cooker for 5 hrs. Sauce can be reduced down separately.

Or Diet Coke chicken - Diced chicken, Diet Coke, tomato purée, balsamic vinegar, chicken stock and garlic powder in a deep frying pan and cook until reduced (about 20 mins).

Both popular with my DC.

My youngest is very fussy. The only curry we could get her to try when she was younger was Lloyd Grossnan's Korma. A DF recommended after her fussy girls started to eat it.

Easy ones - Maggi bags, or Chicken Tonight style sauces in a jar. Tons of different flavours. My favourite would be the Honey/Mustard sauce. All work with either rice or potatoes.

Stir fry - chicken with a few veg and any sauce - either make your own (various recipes) or buy a made up one - NB the fresh ones are much healthier than the long life ones (and they freeze)
Goes well with rice.

A common one I make is chicken with shredded celery, carrot and cashew nuts

It goes well with pasta dishes - fry up some chicken bits with onions/garlic/celery/peppers add passata/mixed herbs/pepper/chilli flakes - goes nicely with a baked potato, but no reason you couldn't eat it with rice or boiled potatoes either.

My mum always used to do chicken in Heinz chicken soup. She used to get loads of compliments about it and people asking for the recipe 😂

Sweat onions, peppers, garlic, mushroom, whatever you fancy. Add chicken pieces, brown for a bit. Add chicken stock and cream. Simmer for a while. Chuck in some frozen peas.

Soup was absolutely a sauce in my house growing up 😂

Condensed mushroom soup with a bit of whole grain mustard stirred through is good! I used to have with small roasted potatoes but would go equally well with rice or some other form of potatoes.

Chicken soup is good with rice or pasta.
