Same - I'd like any recipes. Always get so envious when people say they've got dinner in the slow cooker. I made a rubbish stew with kidney beans once.

I tried slow cooker mac and cheese once, it was awful. Nothing on the more traditional way of doing it. I've done lots of soups and curries, mostly very nice, but I feel there must be hidden gems out there!

Since going veggie I’ve hardly used the slow cooker. I just don’t think it’s great for veggie food. I tend to batch cook, freeze and reheat now instead.

Slow cookers are great for meaty things because they tenderise but I've found veg dishes often end up mushy or tasting the same in every mouthful.

They're good for soups and curries, or a stew where you stick dumplings or cobblers on top at the end.

I make this refried beans recipe a lot and freeze portions that we have in quesadillas (2 tortillas, add refried beans, guacamole, salsa and cheese, toast both sides in a frying pan until crisp).

All kinds of dal are good too, especially now I have an instant pot that pressure cooks the beans much more quickly than a slow cooker. This one is good www.harighotra.co.uk/brown-lentil-dhal-recipe

I know what you mean about veg going mushy; it takes a bit of trial and error with veg stuff for how long to give it.

Slow cooker falafel.
They really do work btw and also freeze brilliantly, I've been making them for years.
