Some odd things to use up - inspiration needed

I've got a packet of ten Chinese crispy duck pancakes and a large pot of clotted cream left over.

Any suggestions?

I wondered about brushing the pancakes with beaten egg, making little parcels of something, and frying them. Would that work, would they stay closed?

(As for the clotted cream - not fudge! The dc made fudge last week, they haven't eaten half of what they made, and sticky patches are still appearing in the more implausible places. Urgh.)

Ooh I think I’d make a big, nutmeggy rice pudding with the clotted cream. Baked in the oven so it gets that lovely brown skin.

Pancakes I’m sure you can warm so they’re a bit more flexible and stuff and then they’ll probably seal up with water. A good basic dumping filling is: minced pork (20% fat) finely chopped raw prawns, chopped ginger, garlic and spring onion and a splash of soy and sesame oil, salt and pepper. And a bit of cold water to it to make a sort of sludge (appetising Grin ) and stick a teaspoon full in the middle and steam.

I’d make ice cream www.deliciousmagazine.co.uk/recipes/raspberry-and-clotted-cream-ice-cream/

Rice pudding - yumGrin But dh would have to eat the lot because I'm low-carbing and my heathen dc don't like rice pudding.

Ice cream, ditto yum. Good idea.

These pancakes are already cooked. Can they be steamed?

There are some recipes for clotted cream cake and clotted cream shortbread.

Add to sauce for creamy pasta.

Topping for small cakes, scones etc.

Another vote for clotted cream shortbread!

As for the pancakes, could these be used for taquitos (with a Mexican-inspired filling, and then fried)?9

If you put a filling in those pancakes, make sure it's already cooked if it's recommended to steam for only 4 mins!

Tbh I used to eat them with just salad and hoisin sauce and any random bits lying around. But I'm off the gluten now 🙁
