Panasonic bread maker. What wholemeal flour?

Just bought my first bread maker yesterday. Made a basic white loaf. Delicious! I see all the recipes for brown bread call for strong wholemeal flour. I didn't see any in Sainsbury's and I only have coarse wholemeal. Would this work?

You need strong flour or bread flour for the gluten content. You might find you can put some of the wholemeal you've got in with mainly strong white flour and it'll be okay - I'd try up to a third wholemeal and the rest white. You'll need to add more liquid. I like half milk and half water for the liquid but be aware that milk gives a softer crust.

The strong wholemeal flour is usually by the strong white flour, they must have run out, so either try another shop or wait until they restock (assuming you're shopping at a normal or large Sainsbury's, not a Sainsbury's Local). A 50/50 wholemeal/white loaf is the least tricky to get good results with, I've found.

Thank you all. Will check the supermarkets today. Can't believe how lovely the bread is out of the bread maker. DH was annoyed at me for buying and he swiftly changed his mind once he tried it!

Try ALDI if you have one near - their bread flour is the cheapest around and works just as well.

Also with wholemeal bread, add a tablespoon of lemon juice to the mix to improve the flour otherwise it frequently doesn't rise properly.
