My partner has invited all his immediate family for dinner in the garden next week after his grandads funeral. We figured given we will not be home slow cooker and chilli is fine. Then it hit me his step father is veggie. Rather than just offering him baked potatoes(doing those so option between that or rice and incase anyone doesn't like chilli) I would really like to make a separate veggie version as I'm sure being veggie his used to people just not thinking about including him and would like to show an effort. Now I know his not a fan of soya so what would people suggest as I can't just make the same one up and substitute the meat for quorn or something. Hit me with your best ideas.

The Nigella Lawson lentil chilli is amazing.

Beans!
I fry a chopped onion until soft, then add a crushed clove of garlic or a blob garlic from a tube and fry for a minute more. Then add a tin of chopped tomatoes and a teaspoon each of chilli flakes, chilli powder, oregano and cumin powder. A tablespoon of tomato puree, Salt and pepper obviously, simmer for about 15 minutes.
Then add a tin of kidney beans in chilli sauce and then one of borlotti beans or black beans or some other mixed beans (drained). Simmer for another 10-15 minutes.
Very tasty not at all authentic. Great served with rice, garlic bread, wraps, taco shells whatever. Easy to double the recipe too.

Use the BBC Good Food chilli con carne recipe and substitute the beef mince for 1 tin kidney beans, 1 tin black-eyed beans, one tin green lentils. Et voila!

Best veggie chilli recipe is BBC Good Food Burnt Aubergine Chilli.

We like the River Cottage pinto beans chilli. You can vary the veg so due to fussy children I miss out the courgette and add sweet corn.
