I don't like food waste but cured or not I'd be putting 5 month out of date meat straight in the bin 🤢

It lasts a long time but surely that's already taken into account in the use by date. I mean if it went out of date in January how old is this chorizo?! Shock I'd risk cured meats a few weeks out of date but I draw the line at nearly half a year past the use by date. But do report back how you get on if you decide to try it Grin

Dried and vacuum packed, yes, I'd eat it, it's already cured meat which in itself is preservation. Especially if it smells fine.

Use by or BBE?
If it's unopened, I'd smell it & then decide.
In Spain, it's not even refrigerated.

It's not a use-by date - it's a best before date.

And it'll be perfectly safe to use.
