Pudding idea after slow roast pork

I am making slow roast pork with dauphinois on Sunday.

I just don't know what to make for pudding. I have a million recipe books but nothing is floating my boat.

What do you reckon? Ta.

What about lemon posset? Delicious, simple to make and can be made in advance. The lemony tartness would cut through the richness of the main course (which sounds delicious btw).

Sort of depends if you want to keep the traditional Sunday dinner theme going or have something light to follow delicious rich main.

So Trad:
apple crumble
Rice pud
Trifle

Lighter:

Lemon tart
Ice cream

Pork is hard to digest so is often accompanied with apple/ apple sauce with the acidity of the apple to aid digestion. So I would go with apple pie, crumble or strudel.

I made a delicious mango fool last week to eat after a roast pork lunch. Tinned mango purée, whipped cream and a couple of beaten egg whites folded together. I served it with lime wedges and a few raspberries on top. It was gorgeous.
