Emergency Baking Question

Simple sugar cookies : can I prep and cut the dough into shapes the night before so that the tray can just be sat into oven the next day? If so, how should they be stored overnight?

Yes definitely. Just cover in cling film and put the tray in the fridge. Bake straight from the fridge. They may need a minute longer but they should spread less if baked from cold.

Yes, I often do this with cookies but sugar cookies won't hold their cut shape well unless you chill the rolled out dough first. Just roll out the dough, place onto your lined baking tray. Cover with cling film and put straight into the fridge. Tomorrow, cut the shapes and bake.
