Cooked chicken thighs - a bit dry...

I cooked a packet last night, so have some leftover in the fridge. They were a bit ‘enthusiastically’ cooked in the air fryer and are a bit dry.

Is there anything I can do with them for dinner tonight, or are they beyond redemption?

Put them in a Thai red curry? I cook the sauce up first then drop the chicken in to warm through. Yum!

I don’t have any sauce sadly (Thai is yum). I’m worried about the chicken just getting tougher (I don’t eat chicken so it’s not my problem really!).

I'd remove the skin & bone, then re-heat very gently in any sauce you already have, or make a simple one with tomatoes, onions etc & drop in the meat when the sauce is ready.
Alternatively, get the chicken-eater to deal with it

I'd chop/shred it, mix with mayo, celery, some chopped spring onion, and make chicken salad sandwiches.
