How much too much? Even twice as much as recipe won't ruin it - will probably taste fine. If you put in the whole bottle that might be a problem.

I put like half a bottle in, I added it twice 😬. I have tried ketchup, that seems to have worked also more tomato purée and some water and reduced!!

I add loads, it adds a lot of flavour. if you've tipped in half the bottle then add an extra tin of chopped tomatoes or more puree/ketchup/a stock pot as mentioned above to spread the flavour more thinly. Add red wine too for flavour.
