What's your best nacho recipe, I want some like you get when your out for a meal or something similar? Many thanks

Fry some diced chicken. Layer of nacho chips, spread on salsa, cooked chicken, add grated cheese, add some jalapenos, another layer of the same. Grate more cheese and pop in oven. Add on sour cream, guacamole or have them in dishes to the side. Om nom nom

Not traditional but the Smitten Kitchen food blog has a recipe for weeknight nachos with black beans and sweetcorn, which has become a staple around here. It's so good.

We make our own too.

Tortilla chips
Jar of salsa
Metric fudge ton of cheese

Chuck all in the oven till the cheese is melted. Slather with sour cream, add jalapeños if you like them.

I make nachos with leftover chilli

  • use the cheap tortilla chips as there’s really no difference in quality for this
  • heat your chilli on hob or in microwave
  • layer chips - chilli - grated cheese x2
  • add jalapeño slices and spring onion

Bake for 5-10 min at 160-180° or until cheese is nicely melted

Pile it all up on a plate or platter, dollop on plenty of homemade guacamole, plus some salsa and sour cream if desired, sprinkle with more spring onion and lots of fresh coriander, and add some lime wedges

You can also make nacho cheese sauce but it’s not worth the faff imo.

Oh and as @BikeRunSki said, refried beans are an excellent addition - I don’t add it as I put red kidney beans in my chilli, otherwise I would! However no need to buy the (expensive!) branded, tinned ones - you can make something similar very easily:

Mexican black beans

I just use either red kidney beans, black beans, or mixed beans. I keep cooking it down until it gets to the consistency I like.

I really want nachos now!

@Horehound I also like to cook a batch of black beans from her cookbook - for the freezer/eating with rice but also takes the nachos to the next level if you use them instead of the tin of black beans.

I like to put a layer of tortilla chips, cheese, guacamole, sour cream and salsa and put under the grill until he cheese has melted. Repeat for every layer - not a single chip isn't covered in something delicious!

Chilli nachos here is a firm favourite.
Make your chilli,add a layer of nachos,chilli,cheese, jalapeno,salsa, guacamole and sour cream.
Also Mexican rice on the side is gorgeous,a proper dinner that's filling.
