I’ve bought a pack (ok two) of puy lentils for a specific recipe..which obviously I can’t find now.

Or boil the lentils in stock, then add Bert finely sliced spring onions or even chives plus sun dried tomatoes and feta.

I don't have a recipe but they make a great veggie lasagne filling. Their texture is quite "meaty". I prefer it to an all vegetable based one

Slow roast lamb leg with peas and puy lentils. Serve with fondant or roast tatties.

This recipe for puy lentil chilli is by far the nicest chilli I've ever, ever eaten. I first ate it at a vegan yoga retreat. I couldn't believe it didn't have meat in it and the chef was kind enough to share the recipe with me. The recipe makes a lot so I normally half it.
