Dinner ideas for anti inflammatory diet and young kids??

I've started going for a diagnosis for endometriosis. In the meantime, I'm trying to see if cutting out certain things will help. Pasta and noodles definitely aggravates my symptoms. I'm okay with very small amounts of homemade bread. Also reducing red meat, dairy etc.

I'm okay for breakfast, lunch ideas but I'm stuck for dinners. I have two young kids, already spend a lot on food and I'm trying to gain weight.

We have the typical meals of spaghetti Bolognese etc.

Can anyone help with dinner ideas that we can all eat? I like us to all eat similar so I'm at a loss. My DH isn't a big fan of soup or mushrooms.

Following with interest. I too am pretty convinced I have endo, plus either some food intolerance or just certain foods that exacerbate it. Apparently it can be a long road to a conclusive endo diagnosis, so I too am trying to do things to improve my symptoms until I get proper answers.

I find gluten-free pasta perfectly fine, and have rice or potatoes as the carb option a lot. I haven't particularly noticed a problem with red meat, but am avoiding dairy. My worst issues have often been if I've eaten quiche or pizza- gluten and dairy combo, I guess!

I'm not a big fan of meat substitutes,so I guess I'd try making bolognese/chilli with turkey mince. Oven roasted frittata type things are good, with no cheese if you're avoiding that. Risotto (ditto re the cheese). Roast chicken, fish, jacket potatoes...

How about tray bakes?
Salmon, lemon juice, fresh herbs, new potatoes tender stem broccoli and asparagus works well.
Chicken breasts dusted with paprika, wedges of sweet potato, peppers, red onion, courgettes, cherry tomatoes, drizzle with olive oil.
Sausage tray bakes are also good if you are avoiding pork sub for veggie sausages (Linda McCartney red onion and rosemary are good) or chicken sausages with butter beans cherry tomatoes and fennel work well.

Are you ok with rice?
Risottos are good, chicken, bacon and leek popular here but you could swerve the bacon if necessary.
A veggie chilli with corn tortilla chips, salsa, guacamole and a pineapple, sweetcorn and chilli salad
Tuna and sweet potato fishcakes, I add chilli too.
Stir fry’s with rice noodles, satay sauce and chicken.
