Deep fryer for novice!

I have recently been given for free a used professional deep fryer (very compact). After a gooooood cleaning it now looks like new!

However, I never owned one and I never fry anything, so I am a bit at loss with the options I have now. It's not I don't like fried food, I do, but normally I buy it from the shops:).

So, what do you normally fry? And - I am ashamed to ask this basic questions - what type of fries/chips do you buy for it? I bought ones or twice those chips you just put in the oven. Are they good for the fryer too or do I need a different type?

The best chips are when you buy potatoes, peel and chip them yourself. Always so much nicer than frozen chips...and cheaper too.

I'm not certain, but would guess you could do tempura?
