Can I chuck this in together you make a pasta sauce?

So it’s Turn up and see Thursday (don’t ask what’s for dinner just turn up and eat Smile).

I have 2 leeks, some carrots, 1 aubergine, some broccoli and a yellow pepper (plus onion and garlic, tinned tomatoes etc).

Can I fry that all off to make a decent enough pasta sauce do you think?

I would use the pepper, onion, garlic and tomato with some seasoning to make a pasta sauce with broccoli and buttered leeks as a mixed vegetable medley on the side.

Yes that will be fantastic.

I would roast the aubergine first as undercooked aubergine isn't great but it gets a lovely texture when sufficiently cooked. Frying also fine but it's easier to undercook that way.

That lot will be delicious.

I've got time to roast the aubergine and so maybe I'll roast the broccoli in the pan too, fry off the rest and then mix it all together with the tomatoes.

Are you looking in my fridge by mistake OP? I have exactly those ingredients in mine.

If you look under the aubergine and the yellow pepper, there is some pork on the shelf below.

If you don't get it all first, we'll have roast broccoli, ratatouilli, pork (and pasta for the carb eaters) here.

If you blitz your sauce, the broccoli might make it bitty.

Otherwise sounds lush and contains all of the ingredients that usually go into my pasta sauce! Got any oregano?

Yes it would work in pasta sauce, but would also be delicious as a curry!

I don’t need to hide the veg by the way. Purely thinking about blitzing for aesthetics and taste.

I wouldn't blitz. Dish up as a ratatouille job with broccoli on the side. Parmesan.
