Impressive dinner party ideas

Hi all, planning an outdoor( weather permitting🤞)dinner with neighbours.
I have been tasked with the main (for 6 )
Only specifications are no fish/seafood /not too spicy.
Fairly decent cook but my mind is blank!
Any suggestions for a wow dish? Oh and a drink/ cocktail
So looking forward to seeing people!

Mexican carnitas! Basically very slow cooked pork. Lots of recipes online about what to cook it in. Easy to prep then you just let it cook all day. I would then spend a bit of time making pineapple salsa, guacamole, pickled onions.... Serve with wraps and sour cream. Informal but super tasty, not fiddly.
