Tried and tested fennel recipes please

I could only get a 2 pack of fennel, used one in recipe it was bought for.
Other than raw in salad, or cooking in butter as a side dish, anyone got any good recipes for using it up?
I know I could google but it's that kind of ingredient where I think it's worth asking for tried and tested.

This sausage and fennel pasta bake except i sub regular sausages for nduja (just stir into sauce). I love fennel.

Risotto. White wine, lemon zest, stock & parmesan. Then add what you fancy of chicken, prawns, courgettes, peas, beans, thyme. There are loads of recipes on BBC food of you Google fennel risotto

Fennel gratin. Same as cauli cheese but with fennel instead. I often use a combo of fennel and other veg in it- leek, cauli, broccoli, peas or almost any other veg really.

Roast with chicken thighs and clementines (I just use bog standard easy peelers if I can't find clementines)

What @Xiaoxiong said - fennel is amazing with roast chicken, either thick sliced underneath a whole roast chicken or in a tray bake with skin on thighs. Season well. There's something magical about the rich chickeny juice and the aniseed of the fennel.

Fantastic thank you all, some great ideas there.I used it in a simple dish from an old cook book. Sorry I can't find the recipe online but it was sliced pork tenderloin (browned) , onions (softened) then cooked with tinned tomatoes, stock and tomato purée on the hob for 40 mins and it was really lovely.

I'll definitely try all your suggestions, I can see how it is a good match with chicken or sausages but spookily was planning a paella with prawns tomorrow. Will now make that a risotto with prawn and fennel. But will definitely try the others. I have hardly ever bought it because DH said he didn't like it. Of course having enjoyed the meal tonight he swears blind he never said that ...

That sounds delicious also. I get sick of the same old vegetables, hence trying fennel again. The gratin sounds amazing thanks

I often use fennel as a trivet for roasting meat on. Very tasty.

DH wraps it in a foil parcel with chopped fresh chilli, lemon zest and olive oil and roasts it on the BBQ. It is so good.

I've put one on my order after reading this thread, not had it in ages.
I'm just going to roast it in the oven with other green veg, (asparagus and courgette), garlic and lemon and serve with plain roast chicken and baguette to mop up all the lovely juices.
Any leftovers which is likely as just me, I'll probably serve cold with salad bits.

It roasts quite nicely with some garlic, lemon and chilli.

Thank you again, so many ideas to try. I think fennel will become a regular!
The leftover bulb I started this thread about was used in a cheesy fennel and potato gratin and served with chicken thighs, and very tasty it was too.
So many other recipes I want to try, thanks again. I struggle to think of different veg - in fact I'm off to start a separate thread on that!
