Ideas for couscous

Bookworm19 · 26/04/2021 12:30

I've recently been getting into cous cous, bulgar etc.
Any ideas on what I can add to couscous? Ideally that can be prepped for lunches for a few days at a time.
I love most foods but do try and eat seasonally where possible.

Thanks 👍

I've literally just had this for lunch - lemon and herb couscous, with chopped cucumber, red onion, cherry tomatoes, lambs lettuce, black olives and mozzarella. Yum.

A quick and easy one - Sainsburys frozen chargrilled Mediterranean vegetables, and fresh chilli and mint.

My favourite cous cous salad recipe is with beetroot/spring onions/mango and feta cheese.

Really yummy and summery too 👌🏻

I love it with goats cheese, peas and sweetcorn and a little chilli oil to add flavour

I do this in the summer when it’s too hot to cook www.bbcgoodfood.com/recipes/10minute-couscous-salad

I add some Marigold bouillon powder to the water when I prepare it. Have it with feta and roasted Mediterranean veg.

I use bouillon granules when making it up, and vary what I add to go with different things, though crushed garlic or spring onions are regulars.
I like a fruity mix with semi dried apricots, raisins, chopped dates, pine nuts to go with slices of ham or roast pork.
Olives, chick peas, chopped peppers and cucumber, walnuts, grapes, goes well with flaked smoked mackerel fillets.
Chopped tomatoes, diced cooked aubergine and courgette, goes well with chicken fillets.

Other flavourings I add include French dressing, Caesar salad dressing, yoghurt, spices and herbs, ready made pesto is handy too.

I like cooking it with harissa and adding veg. Simple but SO tasty

i like lemon and herbs, add in some sultanas or chopped apricots, and some feta ...the stuff in jars with the oil is nice and easy, the oil makes a good dressing if you use it with the lemonjuice.

Also with chicken....shred up a poached breast or use leftovers from a roast.

Same goes for bulgar really, but somehow that always seem to work much better with mint and parsley
