Vegetarian Family Meal ideas

Hoping some you can help with ideas. I like to have at least two vegetarian meals a week but I'm struggling with variety because of my fussy family. DC can be fussy with veg - DC2 will freak out at anything green, DC1 is better but still suspicious. DH is absolutely not fussy you understand, but won't eat quiche, aubergine, courgette or mushrooms Angry

On regular rotation are frittata, dahl, veg chilli, veg curry (cauliflower is popular), puff pastry tart, pizza. Things that haven't worked are veg lasagne, cannelloni, lentil bolognese.

I'm really at a loss and need some more variety - please help!

Veg fajitas are nice, fry chunks of onion, pepper, courgette, aubergine in oil add garlic and chilli powder and serve with grated cheese, sour cream, mashed avocado and warm tortilla wraps. You can add some chunks of grilled halloumi if you want more bite or some fake chicken pieces. Jalapeño peppers from a jar make it really tasty too but leave out for the kids!

Leave out the courgette and aubergine for the fussy ones!

Anything you make with chicken or mince you can substitute with quorn plus

Pasta is so easy
Cheese sauce
Alfredo
Lasagne
Tomato and mozzarella
Peppers and walnuts and tomato
Pesto

Curry with
Quorn
Sweet potato
Cauliflower
Lentils
Peppers

Stir fry (with or without) quorn

Lentil or veggie chilli

Stews with kidney, black beans, sweet potato, spinach, sweet corn etc

Risotto

I know you said no courgette but we are not courgette fans in this family and LOVE the bbc good food courgette lasagne. Made with adaptions and recommendations from the comments I fry onion then add about 6 medium grated courgettes (squeeze out the water first) then once they're softened add 100g Boursin or equivalent and 100g low fat cream cheese. Season and layer with lasagne sheets (dry is fine), top with a tomato sauce (jar or homemade) and bake for 30 minutes. I find courgettes pretty bland and slimy but this is lovely.

Other ideas:
Jacket potatoes with veggie toppings (cheese, beans, coleslaw, creamy mushrooms)
Richmond vegan sausages with mash or in toad in the hole
Veggie fried rice

Leek, mushroom and roasted tomato risotto (I know you said DH won't eat mushrooms but I don't like them and find them ok in this chopped up small, otherwise just do leek and tomato!)

Falafel with hummus. You can also add pickled radishes as well and make it into a wrap.
Shakshuka - you can make it with pouched eggs or as a more scrambled egg consistency.
Menemen- tastes similar to shakshouka
Moroccan couscous with 7 vegetables.

This is really nice if you’re ok with meat substitutes - we use cauldron sausages with it - realfood.tesco.com/recipes/carls-all-change-casserole.html

Vegetable fajitas

Falafel, hummus, flat breads and salad - sometimes do it with roast vegetables or make tsatsiki or butterbean dip instead of hummus.

Creamy leek pasta - from the what mummy makes books, basically finely slice your leeks and soften in butter with a little garlic and occasionally splash in some of the pasta cooking water to help them break down.
Once they’re really soft add cream, grated cheese and lots of black pepper. Stir in the drained pasta with a little more of the cooking water if needed. So simple but really really nice.

I quite often just go a vegetable bake using whatever veg we have that needs using up -
eg broccoli cauliflower green beans peas - part cook the veg, cover in a white sauce (sometimes do parsley sauce) top with breadcrumbs and grated cheese and whack in the oven. Serve with crusty bread or homemade wedges.

Roast peppers, sweet potato, aubergine and courgette if you think you can get away with it, butternut squash - whatever veg you want really. With garlic, cherry tomatoes and splash balsamic vinegar. Stir through cooked pasta and crumble over feta.

Spinach and paneer curry.

Griddled halloumi and veg skewers with couscous or tabbouleh.
