I thought I had everything - butter, sugar, cocoa, bicarbonate of soda/baking powder etc...

Anyone got a recipe? I just have had a request for brownies!

Don’t think you can make brownies without good chocolate.

I made this recipe the other day when ds wanted brownies and I didn't have any chocolate. I did swirl some caramel spread we had onto the top and they went down very well

Mary Berry has a fab one which is super easy and doesn’t need chocolate or golden syrup.

My usual recipe is amazing and uses cocoa not chocolate - people always ask for the recipe and it’s really easy. The recipe came with a lot of sugar but you can always reduce it a bit.

Melt a pack of butter, stir in 1.5 lb sugar, 6 Oz plain flour, 1.5 teaspoons baking powder, 4.5 Oz cocoa, 6 eggs.
Bake at about 180 for 15-20 mins (I always try and take it out when it’s still a tiny bit wobbly as it gives you gooey brownies)
You can also try them with slightly more cocoa and slightly less sugar

I make this without proper chocolate. Kids have never complained.

100g butter
50g cocoa
2 eggs
235g caster sugar
1 teaspoon vanilla essence
40g plain flour
70g raisins (optional)

Melt butter, then take off heat and stir in cocoa. In separate bowl beat eggs, sugar and vanilla till light, then stir in cocoa and mix. Add flour and raisins and mix. Scrape into greased or lined 8" square tin and bake 18-20 mind at 180c fan.

Smitten Kitchen (online food blog) brownies are hands down the best brownies ever. She has multiple (like 15!) recipes for different chocolate cocoa contents and additions.

Her all in one are my go to, but the salted caramel are divine.

I don’t have it to hand but I normally use a Hugh Fearnley-Whittingstall recipe from one of his Guardian columns several years ago, for Cocoa Powder Brownies - you don’t need chocolate and these taste amazing.

This one is foolproof if you have cocoa in the house. If you don’t like coconut put the same weight in either nuts or flour. It works amazingly with gluten free flour too. I think it would work well with normal caster sugar instead of gollden caster sugar too.

No coconut! I have nuts though... only a round dish. I am not prepared for this.

Go with the Hugh Fearnley-Whittingstall one! It’s easy, you can add the nuts - or not - if you like, and so what if it’s in a round dish? Just means some pieces will have curved edges. Just keep an eye on it and adapt the cooking time/quantity if it’s significantly smaller than the size recommended in the recipe.
