Bank Holiday Sunday Lunch Ideas

Hosting Sunday lunch next week (outside as per Boris' orders) and could do with some inspiration-always love reading everyone's suggestions.

There will be 6 adults
2 vegetarians
No fish except salmon

I'm a pretty decent cook, would prefer to prep/cook ahead if poss, don't mind doing one vege dish and one meat dish, or salmon for everyone.

Will probably end with dessert and cheese & biscuits rather than a starter.

Hit me with your ideas Smile

Vegetable pilaf www.tilda.com/recipes/moroccan-vegetable-pilaf/ with lamb meatballs for the meat eaters and falafel for those who don’t.

Or this salmon stew www.deliciousmagazine.co.uk/recipes/salmon-and-spring-vegetable-stew/

The weather is set to be lovely so what about lots of mezze dishes? Waitrose have a new Levantine range so you could get extras (e.g. vine leaves, falafels etc) - also offers inspiration for the kind of dishes you could make if you wanted to DIY - e.g make your own hummus, serve with lamb koftas for meat eaters, roasted Mediterranean vegetables for the veggies. Could also make a spanakopita (perfect for preparing ahead).

Dessert wise - cheesecakes are easy to prep ahead and are normally a winner with everyone - something like raspberry ripple?

I like the idea of mezze type food and the vegetable pilaff looks delicious.

I have a recipe for lamb meatballs & feta so could do that with falafels for non meat eaters.

Off to look at some more recipes.
