... so you actually get a pocket you can put stuff in? Rather than it falling apart/having so many holes in it you have to throw half the pack away?

I have a feeling I've been told lightly toasting them helps, but not sure I've ever made it work

I don the gauntlets and the protective goggles before I attempt to open a toasted pitta, lightly or otherwise.

Its a well known scientific fact there is nothing hotter on God's earth.

I cut them in half across the width then jiggle them about abit to open the pockets.

yes heat it in whatever way you want until it billows out.

I also find using your most blunt knife with a rounded end best, or just using the non-sharp 'back' of the knife.
