Any exciting ideas for pork tenderloin?

HAve nice pork tenderloin to cook.

Any exciting ideas for it? Am not to fond of mustard adn maple syrup (what we usually do).

the Andalucian thing to do would be to fry in chunks with loads of garlic in olive oil.

Cut into medallions and panfry in butter. Serve on a bed of fresh (not dry) tagliatelle) with a mushroom sauce and steamed tenderstem brocoli. (for mushroom sauce... panfry mushrooms (sliced) in butter and garlic, then add a splash of worchestershire (sp) sauce, and several spoons of creme fraiche until the right volume and consistency.

Can add sliced shallots to mushrooms and cook until soft as well if you want.

And a splash of marsala wine to the sauce (before the creme fraiche, and allow it to reduce) for a richer sauce.

Luckily it is big enough for 2 meals- yay

I do creamy mushrooms with creme fraiche. V easy to make and v delish.
