Has anyone made their own sauerkraut? Does it have to be with cabbage? Would it work with kale? Any tips?

I want to know too. Recently bought some but then discovered it is pasteurised, so no good bacteria for your microbiome! What’s the point? So I am thinking about making my own. I’d like to have a go at kimchi too

An old friend did in a flat and one of the jars exploded so make sure you pack them properly. I've tired a very nice one with beetroot mixed in, not sure about kale.

I'm not sure it would work with kale. It's too leafy.
I've never made it myself as living in the Netherlands it's practically the national dish and there's loads of different types in the supermarket.
You can make really nice soup with saukraut.
You need good quality stock, and boil up carrots, onions, haricot beans and the sauerkraut. Once the vegetables are soft you can add dumplings and sliced sausage. (I make a vegetarian version without the sausage).
It works best with a mild sauerkraut, such as one finished with white wine.
