Any ideas for vegetarian stove top recipes

Moved house last week and the oven that was left, has fallen apart so I only have the halogen hob to cook from (don't like using microwave too much...)

My cook books are still boxed, awaiting my new kitchen so just wondered if you'd be good enough to send me some full hob recipes!

I did a 'casserole' (all simmered for an hour or so on the hob) last night. It had:

Chickpeas, carrots, parsnips, butternut squash, green lentils, a green chilli, and leeks plus garlic. Covered with veggie stock. Served it with broccoli (you could do mash too)

Was delish!

And curries are great in the stove.

Anyhow, currently cooking a fennel chestnut and red wine casserole - should have shallots in the proper recipe. Can't remember which herb was in it so I've used mixed herbs. Hope it tastes as good as it usually does.

I'm not one of these people who can make recipes up off the top of my head - I need my recipe books!

Like the chick pea suggestion - might omit the parsnips as I can only eat them in a curried parsnip soup!

Yep, and I'm up on my curries - need to speak to my best indian mate to send me through some more suggestions.

shrooms - always forget to soak the pulses! Been meaning so soak some for over a week now!

I have made a lentil stew today - don't really know what it will be like but it's tasting good so far!

onions, potatoes, carrots, parsnips, swede, green lentils, tin toms, stock, couple of bay leaves and spoon of marmite.

Going to do that with mash for DH and I - can let you tomorow how successful it is!

My famous chick pea curry is always a good bet as well

If you forget to soak the pulses, how about keeping some tins in for standbys.

When you do remember, cook loads and freeze what you don't need.

And a tip from delia is to take the dried pulses, cover with cold water in a pan and bring to the boil, then boil for 10 mins and leave to soak for 3-4 hours. That should do it, and they can be used in your recipe!

what about quorn in creamy mushroom sauce...fry onions and mushrooms with garlic and herbs de provence[or other herbs] add quornpieces and fry gently then add singl ecream and simmer very low heat with lid on and voila lovely and quick ..

I hardly ever use my oven, most of what I make can be done in one pan on a stovetop (legacy of once having a tiny hole of a kitchen). Apart from the ubiquitous pasta and curries mentioned, other things are:
risotto
pilaffs, using other grains as well as rice
cous cous
mushrooms in white wine and garlic
hearty stir fries
frittatas
courgettes with dill and feta
potato and other vegetable rosti
chili with rice

plus loads more I can't think of right now due to lack of sleep.
