please tell me something fabulous to do with fresh sardine fillets..

for dinner tonight...got the fishmonger to fillet them, determined to eat more oily fish, is there something simple and really tasty i can do with them???

stuff full of fresh herbs and lemon slices and leave in fridge for an hour or so then grill or bake in foil// paper with a splash of white wine - simple is best.. or griddle

This is for mackerel, but they're virtually the same thing aren't they?
4 Fillets
juice of 2 lemons
5 tbsp olive oil
1 tsp fresh thyme leaves
6 pieces sun dried tomatoe, cut into thin strips
16 sliced black olives
salt and pepper
Lay the fillets in an oiled, shallow oven pro0f dish in a single layer and season. Pour over the lemon juice, cover and marinate for 4 -8 hours, turning the fish occasionaly. Uncover, scatter with thyme and spoon on the olive oil. Bake at 190c/375F/gas mark 5 for 10 mins. Sprinklw over the tomato and olives and bake for a further 5 minutes, until the fish is cooked through.

Breadcrumbs, pesto, stuff them and grill them. Plenty of lemon and black pepper to serve.

hi sm and suz and mi, thanks subs and turquoise and marina, i think i'll do something lemony, olive oily and olivey...thanks for the inspiration...they were mackerel fillets btw, doh, pregnancy brain still in full effect a year on!
