Vanilla cake fail

Im wanting to make vanilla layer birthday cakes just for close family birthdays but they always seem to fail on the cooking side!

I use equal amounts of ingredient so 150g eggs, self raising flour, caster sugar, butter per layer but when i bake it at 160 for 45 minutes it looks but the middle is still completely soggy... if i leave much longer then it just becomes a dry horrible cake.
Its a 6 inch pan - 3 inch deep.

Any bakers out there that can give some advice please?

Not sure but I do the 6 6 6 3 method
6 oz self raising flour
6 of butter
6 of castor sugar
3 eggs
Mix it all in food processor.. Butter, sugar first, then eggs then flour and vanilla essence.

I think you have too much mixture in tin.
I divide into two tins and bake for about 15-20 mins max

Your baking time sounds way to long for a sponge... So if it's not cooking in the middle you need two tins with less mixture in each.
My mixture is less than two cms deep in tin.
Will rise though.
If you want layer cake you need to bake separate layers

Oh an six inch pan sounds tiny

Agree with Theredjellybean! Are you cooking all the mixture in one cake tin? Much better to put half split between two tins so the middle will cook through.

Also do 20-25 mins on 180 degrees, not longer on a lower temperature.

Also agree with an 8” pan /approx 21cm

Well i had nearly 600g of each ingredient but split between 4 pans. I wanted thick layers but maybe I need to put less ingredient in each pan.

I read that you can fill the pan 2/3 full which mine was but ill try less next time

It's too deep, it can't bake in the middle in that time. Either use 2 separate 6 inch tins bake in separate layers or use a bigger single tin.

Check the cakes with a toothpick or skewer. Poke it in the middle, if it's still cakey then check every 5 min until dry. That should ensure your cakes are fully cooked but you don't miss them before they dry out.
If I put it in 3 tins it usually takes 20-25min at 180C fan and I test after 20min.
