Can I re heat home made stock

I made stock from a chicken carcass a couple of months back and froze it. I've now defrosted it to make a soup and I wondered if I would be able to freeze any leftover soup. My DH thinks that you wouldn't be able to re freeze it once defrosted but I'm not sure.

No problem if you have heated it up since you defrosted it.

NO defiantly won't be able to re freeze. I have just had to do a course and the food safety one was yesterday. If its been cooked/frozen/defrosted it will not be safe to re freeze even if you cook it though thoroughly. That goes for home-made stock and soup especially chicken. Still that means you can eat it all yourself 😉

Ooh conflicting opinion, hence why I asked as DH and I weren't sure. Ladymouse Okay, thank you I won't freeze then. There's going to be more than a meals worth made so can I stick the leftovers in the fridge and re heat that?

Well, Ladymouse, I have learned something today. I never knew that. It probably won't actually make a difference to me, but I will know not to tell anyone else it is OK. I have done that for years (and reheated rice) and survived thus far.

I've always done this - made soup from frozen stock and then frozen the soup.

It's fine as long as you've been following good process all through. So if the stock was left sitting out for a day before you froze it - not great - but as long as was chilled quickly and properly before freezing - fine.

I wouldn't do it. General rule is if something is frozen uncooked, you can cook it and refreeze it. But in this case your stock is already cooked before being frozen, so you'd be refreezing it in the same state.
