I had it on its own but DH and the DCs had some roast chicken with it. I really think using the tins of peeled cherry tomatoes (instead of tins of chopped tomatoes) made a difference to the sauce.
And I used the focaccia as suggested.

I love aubergine parmesan! It's one of my favourite things to eat but I don't like the faff of breading and frying so I rarely made it at home before I came across this method (which is imo equally delicious but no faffing): anewsletter.alisoneroman.com/p/a-newsletter-29

That has gone into my recipe 'book' for next week, along with "Chinese eggplant (called fish-fragrant eggplant), from Fuchsia Dunlop and Israeli twice cooked eggplant, from the Zahav cookbook" that somebody called Ian recommended in the comments underneath that recipe.

That all sounds amazing, will make a note. If there’s aubergine on a menu I will always order it. I don’t know if you’re a baba ganoush person? That’s one of my favourites too, and the Japanese aubergine with the sweet miso glaze (can’t remember what it’s callled).
