I’m bored of cooking. I’m bored of our usual meals. I need a change.

Although I’m trying to cut down slightly on our weekly shopping bill I’m planning to cook at least one new thing every week. Doesn’t have to be but would like it to be veggie/fish based. There’s only 2 of us and I feel like I just cook the same, quick meals over and over and it’s put me off cooking. We’re eating far too many takeaways.

I’m not a fantastic cook but I can follow a recipie/instructions pretty wellGrin

This is veggie and takes 15 mins. We add spinach to the sauce as well, and you could add different things to make it whatever your preference is as it’s pretty basic.

Tik Tok pasta is my current favourite. Made with feta, tomatoes, pasta, olive oil and I bung a tin of tuna in. It's delicious

Grate lemon rind.. Squeeze lemon juice.. Grade some hard Italian cheese.. 4 cloves of garlic grated.. Olive oil glug.
Cook pasta add above.
Chop a bag of baby spinach finely and add. Top with crushed pistachios

I can't find the recipe but one that we sometimes have at the weekend is this;

Cook enough pasta for all of you.
Add the grated rind and juice of half a lemon
Add a couple of glugs of olive oil
Add Torn up smoked salmon
Add a generous amount of rocket and black pepper
Give it a good mix up and serve.

Literally ready in 10 minutes.

I've been trying to try something different every week but our recent favourite is chicken in gravy. Mix a 1/2 cup beef stock with plain flour then add additional cup of beef stock and then chicken breast with skin on. Cook in the oven for 30 mins (180c fan) the gravy is so tasty and really easy

LInguini with chilli, cherry tomatoes and crab
Tuna steaks with balsamic vinegar and black pepper
Field mushrooms stuffed with rice, the mushroom stalks, onions and garlic topped with cheese and breadcrumbs.
Grilled haloumi and pineapple and sweet chilli sauce, served either with a salad or in ciabatta rolls as burger.

One bowl crusty white bread. Obviously needs time but ten mins here and there ans it’s lovely.

800g bread flour
2tspn yeast and salt
600ml warm water

Mix everything together in large bowl with spoon. Cover and ignore. When you remember keep in bowl but keep folding and stretching. Cover and Ignore then stretch again. Leave and then shape on a tray - leave for a bit then bake.

Non of the timings matter at all - always makes gorgeous crusty bread

Sea trout/ salmon with spring greens cooked in lots of butter. Season fish and put oil and butter in pan medium heat until hot 3 mins skin down for fish 2 mins other side then add more butter and sliced greens in cooked for few more mins. Bit of lemon and season to taste I love it!!! Or seabass/bream with tomatoes olives peppers and basil down in the same way but minus a minute for either side of the fish. I find you either wants carbs or protein for superfast meals. Also a bottle of wine and large bag of crisps works but only if you dont have share and can eat on the sofa!

I have a Sunday lunch pudding hack that’s really quick to prepare and delicious.
I buy a few packets of Wrights cake mix each month then make a pudding out of them by lining an oven proof dish with whatever fresh / tinned or stewed fruit I have in, making up the cake mixture with 200ml of water and 60ml of oil. I then put it in the oven at 180 for about 25 mins - should be brown on top but slightly gooey inside.
Every-time I’ve done this it’s produced a gorgeous pudding in minutes with minimal effort.
I serve it with cream or custard 😍

My favourite combos are:
Madeira with blueberries
Stewed rhubarb with ginger cake
and
Tinned pear with toffee
Chocolate and raspberries
