Insightful game recipes

We are very lucky to have a ready supply of game in our household. Our freezer is brimming with pheasants, partridges, venison and the odd grouse, pigeon and duck. We don’t have the need to buy supermarket chicken, so our children have grown up on the much healthier game alternatives. Over the years we have cooked them in many ways but I’d really love to hear from all of you as to how you cook your game and hopefully pick up a few hints and new recipes to try.

My go-to recipes for venison are:
Ragu served with tagliatelle or creamy mash
Pie www.goodhousekeeping.com/uk/food/recipes/a549826/venison-pie/
Tagine www.abelandcole.co.uk/recipes/saffron-venison-squash-pomegranate-tagine
Curry www.bbcgoodfood.com/recipes/venison-madras (handy as it freezes well)

I always happily give game away to whoever wants to use it. It’s such a wonderful source of healthy, lean protein that has truly lived a free range life.

Tandoori venison is divine

I like pheasant or partridge pot roasted with raisins and dried figs and white wine.
Partridge stuffed with semi dried apricots and roasted is another favourite.
If you have rabbit, my favourite way to cook it is a Catalan casserole recipe with onion, red peppers and white wine. Very good served with rice or cous-cous.
