Looking for suggestions - Tesco don't often have corned beef (the spiced beef joint, not a tin of crumbly stuff), so when I noticed it was in stock, I got some. I'm going to be cooking it with a Bourbon glaze, accompanied with spiced red cabbage and apples á la Delia Smith. Not too sure what to serve with it - mashed potato is a possibility, but seems a bit boring. I'm looking for something that'll contrast nicely with the sweetish meat and cabbage - any ideas? DH won't/can't eat courgettes, fresh tomatoes or lentils, but otherwise anything goes :)
