How to perfect this tomato sauce

Happytodayhappytomorrow · 21/03/2021 17:25

I roasted tomatoes, onion, garlic, olive oil and balsamic with some seasoning and a sprinkle of sugar.
I’ve now blitzed it and although it’s ok, it’s a little bland.

What can I add to it at this stage please?

It’s going on top of chicken parmigiana tonight.

TIA

Worchester sauce
More garlic, salt and pepper

Butter

Lemon juice, dash of vinegar, salt.

StrawberryPi · 21/03/2021 17:33

It probably just needs a pinch of salt and/or a squeeze of lemon or vinegar to brighten it up!

Smoked paprika and loads more garlic and pepper.

Basil; dried will do but fresh would be better if you have it.

Try more salt before you add anything else.

Worcester sauce and a dash of tomato puree.

Thank you all
The Worcestershire sauce has done the trick plus some more oregano
I’d already been quite heavy on the garlic.

Out of interest, what does butter add/do?

I know you've fixed it now but I also add a little veg bouillon powder and tomato purée.

Quartz2208 · 21/03/2021 19:29

Butter makes it velvety and rich - it really does make a difference adding it

RickOShay · 21/03/2021 19:30

Definitely a bit of sugar.

RickOShay · 21/03/2021 19:30

Agree with butter

YouAreTheWordsIAmTheTune · 21/03/2021 19:32

Vodka
