4 oz caster sugar,
4 oz marge
4 oz SR flour,
2 eggs
Drop vanilla extract

beat sugar and butter together until creamy. Beat eggs in cup, add vanilla. Add alternate flour and eggs, put in oven 180degrees for 12-15 mins until golden brown.

Meanwhile, add tiny amounts of water to bowl of icing sugar, until right consistency to smooth on with knife.

Or beat icing sugar with butter to make butter icing.

125g / 4 1/2 oz softened butter
125g / 4 1/2 oz caster sugar
2 eggs, lightly beaten
1 tsp vanilla extract
125g / 4 1/2 oz self-raising flour
2 tbsp milk

Preheat the oven to 190C/375F/Gas mark 5. Either butter the tin or place the paper cases in the holes (see above). In a mixing bowl beat the butter and sugar until pale and fluffy. You can use an electric whisk or a wooden spoon.
Add the beaten egg, a little at a time, whisking to incorporate, then beat in the vanilla.
Sift in half of the flour and fold into the mixture. Add the milk and the rest of the flour and fold until well combined.
Spoon into the tin and bake for 12 minutes or until risen and golden on top. Allow to cool for ten minutes on a rack before removing

4oz soft marge, sr flour, caster sugar and 2 rggs. 1 tsp baking powder and a splash of milk. whisk it all together with handheld whisk- add choc chips if you want. Makes about 12. bkae 12-15 mins 170 gas mark 5
Icing- mix icing sugar with tablespoon of water until it is thick. Use spoon dipped in hot water to spread icing and then pour hundreds and thousands over it cathcing the spare in a bowl.

You can add a couple of drops of lemon juice to the icing for a bit of zing

or substitue an oz of flour for an oz of cocoa powder for choccy buns and add some cocoa powder to butter icing

thanks everyone - fairy cakes are made and butter-iced with hundreds and thousands on and cherry on top. wanted to make them for a after-school treat for dd as she has her first spelling test today and had practised SO hard! so, many thanks
