What’s your favourite quick dinners?

I have two small dc & work 3 days a week - i’m out of ideas for quick dinners on these nights. One of my girls is quite fussy the other one isn’t overly so. Please could you share ideas with me?
I do try & batch cook so we have a few easy meals when I can but I don’t always have the time at the moment.

I like noodles - super quick to cook - add frozen veg at last minute- drain and add splash of soy, beaten egg and cooked chicken or ham or cheese.
Very quick and yum is ..fry garlic and chilli, add cooked pasta and Parmesan.
Or pasta with butter and cheese. Yum!
Or ds fave pasta with chopped bacon and peas. Very easy indeed 😀

Smallish cast iron pan (mine is 20cm). Lots of half tomatoes, some oil, and other spare veg (not essential), roast in oven. Add egg at end until cooked. Serve over bulgar wheat or couscous or sourdough. Use feta if no eggs.

When I used to be up against time, (funnily enough I have loads of it at the moment. Grin)

Mini chicken breast fillets or cubed chicken breast dropped into boiling water with some lemon juice and blanch, until they are just cooked.

Drain

Cool

Freeze

Remove from the freezer the morning you need them, buy some stirfry mix, boil some noodles, flash fry the chicken to make it brown and hey presto chicken stirfry.

Ditto chicken curry, some onion diced and fried in curry powder, tin of tomatoes add the chicken at then end, you can do this whilst the rice is boiling and the plates are heating.

They are my fastest dinners.

Smoked salmon pasta.

Chop onion

Soften

Boil tagtliatelle or spaghetti

Add smoked salmon trimmings and cream with some black pepper.

Another quick dinner.

I do that with instant noodles. I call it 'Pinoed Up Noodles'. I particularly like prawns and chilli in it, and yes beaten egg is a MUST.

So glad others do it like that!

(Years ago a MNetter posted that they do this with some broccoli and beaten egg and for reasons unknown had her arse handed to her. Wierd.

I used to use a lot of the Maggi cook in the bag packs. Perfect for a quick dinner - just throw in some chicken pieces and whatever veg the recipe suggests, seal bag, chuck in oven with a tray of chopped root veg (roasts) for 40 mins. Literally 5 mins prep. They're often on offer at 50p/bag.

Hi ApplesPearsAndCrumble nice to hear you do it too! Love noodles..been known to eat egg noodles with butter soy and peas, yum. Now curious to try broccoli and egg..sounds good, cannot imagine why that would cause dismay, very odd.
Got to mention chicken pasta the kids wolfed down last night too..
Fry chopped chicken thighs and garlic, add cre me fraiche or cream or old mozzarella and loads of mild cheese. Stir in pasta. Even Dh ate, and he’s always telling me how he dislikes creamy stuff.
There’s some super stuff here, just got to remember to look at tea time!

Peanut noodles. Mix peanut butter, chopped spring onion, soy sauce, chilli flakes splash of red wine vinegar and hot water to make a sauce. Add to noodles. Yummy !

I never use these!! I have NO idea why not. I am going to go buy some because I stick the same old same old flavourings and defintiely need something a little more interesting. Thanks for the idea!

I am not sure either why the poster got slammed. It was in my early days of MN usage and I found it difficult to read the room of some threads. I was not sure if it was an attack for being such a terrible parent as using instant noodles, or for being pretentious to try and pimp them up.

(But it gave me the idea in the first place, so all good. :) ) Total staple for us now. And I felt vindicated when i was watching a cooking show set in Sth Korea and the chef used instant noodles also!
