How do you know if mascarpone is off?

Brand new today. I haven’t used it before so not sure what it’s meant to be like. Opened it and it has a mild (eggy?) smell, which seemed to go once the packet had been open a bit.

Is it okay to use? Date is fine and packet was sealed!

I am sure it is fine. Taste a little to be sure. I would be worried if it was going pink and had fur growing on it, but your description sounds perfectly OK.
