Quesdadilla - sides

I'm making spicy chicken quesadilla for tea tonight. Usually serve with a sweet potato salad & grilled corn. Just looking for some suggestions of other sides to try. Any ideas?

Was going to suggest corn. How about mexican rice, or tortilla chips with guacamole/salsa/sour cream 😋

Good idea. I have advacado left over from the salad I can make quacamole. Opened a bottle of Corona to get me in the spirit. Cheers!

Too late but there's a wonderful salad I had in Tequila and it's sweetcorn (fresh) with lime juice, crumbly cheese, mayo, chilli, garlic, spring onions and coriander. I've recreated a few times, and served whole on the cob with the dressing drizzled over the hot grilled corn.

Grilled sweetcorn cut off the cob, mixed with diced cucumber and chopped deseeded tomatoes. Squeeze over some line juice and coriander if you have it.

Something like a sweetcorn or pineapple salsa, or pico de gallo.
