Dinner tonight without the oven

Palavah · 13/03/2021 17:11

What can I make tonight? No oven, just a grill, hob and microwave.

Would like healthy but substantial. No allergies. No red meat.

Brain stuck as all I can think of is traybakes! Am risotto-ed out.

Fajitas

EspressoExpresso · 13/03/2021 17:14

Stir fry
Spaghetti Bolognese (Quorn/soya or turkey mince?)
5 bean Chilli and rice or jacket potatoes
Macaroni cheese (finish off under grill rather than oven)
Lentil cottage pie (again, finish under grill)
Curry and rice
Sausage (grill or shallow fry) mash and beans

So many options...

I am making Chinese pork steamed buns, egg fried rice and a salad with bean sprouts, radish and a dressing (saw that on a programme on bbc1 this morning, a Sri Lankan recipe).

LaurieSchafferIsAllBitterNow · 13/03/2021 18:05

burgers, steaks, meatballs and pasta, salmon and new potatoes, anything stirfry

I was months without a proper oven...although the microwave is also a combi, but mostly wholly ineffective

godsake....I swear your "no red meat" proviso was not there before!

but chicken burgers, or pork steaks if that escapes your red meat ideals!

Giant omelettes, or fritattas, and if you have a good large shallow pan with a tight fitting lid and a hob that works nicely on low you can make a passable pastabake and brown it under the grill last minute.

Cook pasta, drain, fry some chillies in pan, slop tin of chopped tomatoes or passtta in pan, then melt in a huuuuuge slab of bourin cheese, once melted in and sticky then sling pasta on, lots of grated parmesan on top. We usually fry off chorizo with chillies.

Lovely and unctuous Grin

Fajitas
Stir fry
Pan fried fish and veggies

This stir fry is very good - www.bbcgoodfood.com/recipes/pork-aubergine-noodle-stir-fry

Maybe a veggie Thai curry

minipie · 13/03/2021 18:30

Stir fry with chicken, prawns or eggs (pre cooked rice pouch makes it easy)

Pasta with tomato based sauce or creamy sauce (eg creamy mushroom sauce or cream cheese with salmon & peas)

Braised chicken thighs, mash/new potatoes, green veg. Or any kind of meat/fish plus potatoes plus veg.

Shakshousha (sp)

Chorizo stew (mine has onion, chorizo, new potatoes, stock cube and water, chickpeas butterbeans, sometimes a can of tomatoes, greens)

Lentils cooked with stock veg mushrooms and tomato (though best with some bacon or sausages in too...)

It was a bit of a challenge and the buns were HUGE but it was tasty and enjoyed by all. I love making bad buns so this was them but with a filling. My one mistake, apart from mahoosive buns was not putting greaseproof paper under them before going in my steamer. They stuck and the filling came out.
