Scallops for a beginner

Looking for a really simple scallops starter recipe for someone who has never cooked them before. Tasty but simple. Any ideas?

Fry pancetta in butter. Add scallops!

You could add herbs if you wanted posh - watercress for example.

How long do you cook them for? How do you know when they are done?

Couple of minutes either side. Maybe three mins if large.

Really hot pan - bit of oil and butter - caramelise on one side (couple of mins max), turn over and do other side. Might need to do the sides briefly if the are large ones. Serve with crispy pancetta or black pudding. One of my fave starters!
