Birthday cake for SIL (brother's wife) - Lemon Drizzle or more elaborate?

I'd like to make a nice birthday cake for SIL (brother's wife) - she likes Lemon Drizzle but also other cakes - thinking maybe icing or a bit more elaborate than a Lemon Drizzle, any ideas for something not too hard?

What about doing a lemon drizzle or Victoria sandwich but naked icing it. That's what the cake lady I buy from does.

If SiL likes lemon drizzle, you could do Victoria sponge sandwich with lemon curd and vanilla buttercream in the middle - similar flavours, more birthday-y

I was going to suggest what @UniversalTruth posted. Add some grated lemon rind to the sponge mix for the lemon flavour, and use lemon curd and buttercream, or mascarpone (which is as creamy as clotted cream) for the middle bit.

oh yes! should I hand make or just use a shop bought lemon curd? would make the buttercream of course.

I could use sugar icing letters and I have coloured alphabet candles

She's my DB's second wife so second SIL - the first one was a bitch - she'd probably admit that but this one is lovely!

She deserves a nice birthday cake and they're visiting from SW England to my parents - I'll be there - sod the rules! half joking, we are all safe! Smile

My daughters favourite birthday cake is lemon madeira with lemon curd in the middle and lemon Buttercream on top (though mascarpone sounds even nicer!)

Dont ruin the lemon drizzle with lemon curd or buttercream! Do a nice Victoria sponge or something as the ‘birthday cake’ and a separate lemon drizzle. Loving lemon drizzle cake does not mean automatically liking other lemon cakes.

I have made lemon curd before and it's not too tricky but if it were me I'd just buy some top end shop stuff otherwise it could end up too runny for spreading on cakes which would be annoying.

IMO lemon cake shouldnt be "adulterated" with another flavour. Celebrate the lemon I say.

If it's a lemon cake you're after, you literally can't get easier than this one. The ingredients are measured out with a yoghurt pot and it's a no-fail recipe. Keep it as simple as you like, or else drop in the blueberries too and do the lemon buttercream icing. It's probably one of the best and easiest cakes I've ever made and the people who tried it have been raving about it. 😍

Personally I LOVE a good sharp lemon drizzle - would love if someone made that for me - and I wouldn’t want any dilution with buttercream or curd.

But I have to ask @Chimoia - what is naked icing 😮 ??!!!

I agree that if it is a lemon drizzle cake then adding anything else wouldn't add anything to it. A lemon flavoured sandwich cake with buttercream or mascarpone and lemon curd is entirely different, and I would be happy with either.

Lemon drizzle isn't fancy but done properly is so.decadent it works as a birthday cake. You can sift over some icing sugar and hang mini bunting or.sparklers to make it look more exciting, without having candles (which feel very covid insecure!). Lemon meringue also amazing.

Personally I love lemon drizzle but don't like cream and custard so would be a bit gutted with all the fancy icings suggested above, but that might just be me...
