I promised Shrooms that I would post this. It is very yummy, quick and easy to make and it is not only vegans who would enjoy it, honest. As there is no added sugar it is a good cake for young children, if you grind the nuts up first.
225g dates
55g walnuts (or pecans)
85g vegan margarine (or butter)
285ml water
115g raisins
1/2 tsp cinnamon
1/2 tsp nutmeg
pinch salt
225g wholemeal flour (or you can use plain white)
1 tsp baking powder
1 tsp bicarbonate of soda
- Chop dates and nuts
- Put the dates, margarine, water and raisins in a large saucepan. Bring to the boil and then let boil a couple of minutes
- Remove from the cooker, stir in the remaining ingredients and mix thoroughly
- Turn the mixture into a greased loaf tin
- Bake at 375/190/gas 5 for about 45 minutes
