Help me meal plan for this week

I’ve lost my cooking mojo. We did a couple of weeks of hello fresh which could basically be summarised as disappointing and did nothing to kickstart me.

So... Help me meal plan for this week.

Two adults, one toddler.

Attempting to be healthier (there’s been far too much freezer beige and takeaways).

Quick and easy is a bonus. Did I mention the toddler?

So...what do I want to eat? I mean apart from cheese

Fajitas
Some kind of pasta dish - salmon and peas stirred in with creme fraiche is nice
Traybake - veg, chicken or fish, cubed potatoes. The Roasting Tin is a great book for inspiration
Homemade fish cakes with lots of veg
Steak and chips
Moroccan chicken and couscous
Veggie bean stew with crusty bread

Homemade pizzas
Sausage, mash & veg
Pie, mash and veg
Spaghetti bolognese
Lasagne
Carbonara
Roast chicken & trimmings
Homemade soup
Chilli
Omelette
Toad in the hole
Casserole
Mince and potatoes
Shepherds pie
Pasta and homemade sauce
Salmon & new potatoes
Lamb chops and new potatoes

All can be served with side veg etc

Chicken leek and bacon savoury crumble
Beetroot risotto
Falafel in pitas with salad
Cod wrapped in prosciutto
Stuffed field mushrooms with blue cheese topping
Tuna steaks with balsamic vinegar, roasted tomatoes and garlicky green beans.
Shakshuka
Paprika chicken and veg skewers

My plan for the week is...
Fish pie
Chicken soup followed by sticky toffee pudding
Veggie sausage, potato and tomato tray bake
Chorizo broccoli and tomato pasta
Fish and chips
Quorn chicken nugget wraps and salad
Roast lamb.

I'm a big fan of one-pot meals to make life easier!

How about a “theme” for each day
So say
Italian day: Risotto/gnocci with pesto/ bolognese
Easy day: egg and chip/jacket with fillings
Mexican day: chilli/fajitas/enchilada/quesadilla
Curry day: adjust spice to be suitable for family
Noodle/stirfry day: again spice to be suitable for family
Traditional food day: pie, bangers and mash, toad in the hole, soup and bread etc
Left over/takeaway day.

Ok so my Dragons Den pitch is for
Someone to take my way and put it in an app...20 odd weekly menus in my current scope, 2 adults two kids, I have an online favourites order (click and collect or delivery for each) tweak as needed. Grin

Meals for next 7 days. DC adults but always ate the same as us:

Sat: Salmon fillets, asparagus, hollandaise, New potatoes

Sun: roast chicken large with stuffing and accompaniments.

Mon: curried chicken with onions peppers and mushrooms with rice and some Indian samosa/baji snacks

Tue (having used chicken carcass for a pan of stock in which to boil the pasta and add to the sauces + an additional breast or cpl of thighs) chicken pasta bake with leek, brocoli, cheese, creme fraiche) with a side salad

Weds: gammon, egg and chips

Thurs: lamb leg steaks, sautéed potatoes, Greek salad.

Fri: Fish - something easy a shop bought pie or fishcakes.

Other reg dinners: spag bol, lasagne, chilli, beef casserole, ratatouille, sausage, mash and beans, beef burgers w chips and salad, tex mex variations, ribs, and for speed often a bung in the oven supermarket fancy chicken breast with parmentier potatoes and prepped veg, stuffed peppers, kedgeree, chicken one pot with various ingredients, Macaroni cheese, meatballs, cod bake, roasts on Sundays, etc.

I’d double this recipe and serve DH two burgers. Serve your toddler a chopped up burger, cucumber sticks and the extra half a burger bun that you’ll have left toasted and spread with the mayonnaise.

Pasta with salmon and peas www.bbcgoodfood.com/recipes/pasta-salmon-peas Any extra makes a good lunch the following day.

Use up the remaining crepe fraiche from the above recipe (I always end up with 60g left) in this recipe www.bbcgoodfood.com/recipes/creamy-mash (halved). Serve with this quick stew realfood.tesco.com/recipes/chorizo-butter-bean-and-spinach-stew.html Any remaining portions are great for a quick lunch with crusty bread or a jacket potato. Or only use one tin of beans

Frittata www.bbcgoodfood.com/recipes/pea-feta-summer-herb-frittata It says it serves 4, but we have it as a main and it would be perfect for two adult portions plus a toddler. Just use normal peas, not petits pois. It uses feta and cream cheese which you’ll have left for lunches. I’d be tempted to get some smoked salmon or pastrami and bagels.

I've just gone back to including traybakes, I'd forgotten how easy they are. We had honey & mustard chicken last week and everyone enjoyed it.

Oh and beef stew is usually fairly easy to prepare and is usually toddler friendly Smile

We tend to do

a roast
a pasta dish, usually vegetarian
a curry, often vegetarian
a meat and 2 veg, often a casserole or traybake
a fish, usually something with salmon and rice or noodles and stir fry veg
a jacket potato and something
a hearty soup
a hearty salad
a breakfast for dinner (like eggy bread with beans)
something based on beef mince
a sort of mezze, or Italian based bits and bobs
something in a wrap
something based on roasted Mediterranean veg with maybe cous cous and halloumi

shuffle all those round and repeat
