It's best with wine vinegar, if you've got it. Handful of freshly chopped mint (or a tablespoon of dried), 1 teaspoon sugar, stir in 2 tablesppons of boiling water to dissolve the sugar, add 2 tablespoons wine vinegar and leave to stand for at least an hour.
