I'm making croissants for the first time tomorrow morning. Can I do some of the recipe tonight? Recipe I'm following takes about 3 hours in total. It looks like a pretty standard croissant recipe. Wondering if I could do first few steps tonight...?

Oh I don't know on that one sorry, I've never made them. Do they really take 3 hours?

LaLoose · 04/03/2021 19:47

I'll be amazed if it only takes three hours! You need to add all the chilling in between 'turns', too. Or aren't you making the puff?

Dollywilde · 04/03/2021 19:50

Fair play OP. I’m a keen baker but I’ve never attempted croissant, let us know how you get on!

I always make the poolish at least one day ahead

I think any time a recipe calls for resting or chilling, then it can be done overnight.

I once spent nearly all day making danish pastries, then left them in the oven a few minutes too long and they were ruined.Sad

Maybe if I have to isolate again I will have another go.Grin

I once spent nearly all day making danish pastries, then left them in the oven a few minutes too long and they were ruined. Oh that's harsh, I feel your pain!

BunnyRuddington · 05/03/2021 08:39

How are you getting on with them @Waitinginthewings? Have they turned out ok?

Waitinginthewings · 06/03/2021 20:05

Hi, The croissants turned out really well. They were an odd shape but they tasted amazing and the house was full of lovely homemade croissants smell. 🙂. I can't wait to make them again. I did half of recipe night before and finished in the morning.

Could you share your recipe, OP? I tried making croissants last year but they weren't good, they tasted ok but were much too small and hard.
