DH and I are on a health drive and are eating a lot of salads for lunch. It is working and we have both lost a stone each. They are getting boring though as we eat the same thing.

Please share your go-to salads

Rocket,Parmesan shavings and chopped walnut.with balsamic drizzle.

Mixed leaf , cherry toms, red onion and sliced cucumber with roasted sweet potato and sprinkled with feta .

Mix leaf , tomato, cucumber, red onion with chicken breast cooked with a sprinkle of 5 spice and served with a drizzle of sweet chilli sauce .

I also copy a M&S salad (not sure if they sell it) but I use crayfish instead of prawns

How long did it take you to lose a stone?

We often have variations on coleslaw but with oil and vinegar rather than mayonnaise.

MIx of shredded red cabbage, spring onion or something else oniony, grated carrot, grated beetroot, grated courgette, parsnip - any of those - the cabbage is the main one.

Last night I dressed it with rice wine vinegar, soy sauce, honey, chilli, coriander and lime juice. Added some chopped up nuts for crunch. had with rice and a some veg curry.

It's cheap, you can make it taste very different and it's nice on the side of most things.

I always use salad leaves as base plus grated carrot/tomatoes/diced cucumber if I have them in the fridge, then normally add:

  • feta, olives, spring onion
  • boiled egg, sweetcorn, spring onion
  • canned tuna, olives
  • roasted root veg, goat cheese
  • cannellini beans or chickpeas, diced mozzarellla
  • avocado, sweetcorn, feta

A favourite I haven’t made yet this year, tinned lentils, feta, cherry tomatoes, lots of parsley and black pepper then dressed with a mix of olive oil, grainy mustard, lemon juice and Mayo.

Tabbouleh - with LOADS fresh herbs.

Fattoush - similar to tabbouleh but with pieces of toasted pitta.

For both of these I make a dressing with olive oil, lemon juice, pomegranate molasses and sumac. I also like to add raisins or dried fruit.

Warm steamed sweet potato drizzled with sweet chilli sauce, topped with pickled onion (red onion steeped in lime juice for an hour), coriander and feta.

Kimchi - I make a batch quite often out of any left over veg.

I like a bed of leaves, carrot ribbons, celery, red onion and red pepper, . Topped with warm, spiced cauliflower and chickpeas. Then drizzled with a yoghurt, cucumber and mint dressing. This is also nice with chicken tikka pieces.
Spinach base, celery, spring onion, sliced apple and crumbled Stilton.

I've just had chopped pepper, cucumber (without seeds), shallot, cherry tomatoes with basil and feta cheese with a goodly splash of French dressing.

I also like lettuce with carrot peeled in and rocket added but I don't have any of that in.

Also a slaw fan. Sprout slaw is my current obsession (replace cabbage with sprouts)

For something more filling roast aubergine, courgette, red onion, pepper and tomatoes (or whatever combo to the above you have) well seasoned. Halfway through add cous cous (I like the giant stuff) or other grain of choice plus veg stock - cover with foil. At the end stir in rocket or other green of choice plus feta/goats cheese/grilled halloumi/similar if you like cheese. It’s also good with lamb chops
