Has anyone tried baking Tana Ramsey's muffins from her latest cook book? I just can't work out what I'm doing wrong as the mixture is thick and gluey before I bake and after a day the are so dry they are fit only for the dog (he loves them!) Any ideas or thoughts??

Buy Muffins Fast and Fantastic by Susan Reimer instead.

You mustn't over mix when you stir the wet ingredients into the dry. Just enough to cover all the flour.

Agree - Muffins fast and fantastic is the best one I have found for consistently nice results, and v easy too.

Agree here too, I've had 'Muffins Fast & Fantastic' for years and there are some great recipes in there which work every time!
Cocoa and courgette muffins, yum...
