Padding out lamb rogan josh?

endlesswicker · 01/03/2021 14:22

I'm making this later from yesterday's leftover lamb, but there isn't all that much of it. I'm thinking of adding onions and peppers but can't think of anything else and am fresh out of ideas.

What else can I throw in?

Any spinach? Or diced new potatoes?

Do ypu make a salad to go with it? Sliced redonion is lovely on top of lamb rogan josh.

Chickpeas. I put chickpeas into almost everything. I know its not authentic but I'm not sure Rogan Josh is that authentic in the first place.
Or make a load of daal to go with it.

I add every single vegetable I have to a curry anyway. Love potato in a curry.

I always add mushrooms , particularly small firm button ones as they keep there shape and add chunky bulk ( unlike lentils etc )

magicstar1 · 01/03/2021 14:26

We put loads of mushrooms in, they have a meaty texture so make it a lot more substantial.

Cauliflower

I put lentils in mine.

Red lentils?

BusyLizzie61 · 01/03/2021 14:33

Lentils would be first port of call. But I'd also have peas, potatoes, and spinach. 😋

I agree with chickpeas. I often put them in a curry to make it go further.
