Using up coconut milk

Hi MN, I have three quarters of a can of coconut milk I need to use up. Thing is I don't much like coconut milk - I find curries swimming with it too rich. Any savoury recipes for me please that use coconut milk as a taste to enhance ingredients , rather than a main ingredient in itself ? Hope this makes sense! TIA for any help

Cook rice in it, coconut rice js lovely.

Put it in ice cube trays and freeze it. ( once they’re frozen just keep them in a ziplock bag)
