Sourdough Starter

I know this is so last lockdown, but I’m a newbie at this. Day 4 of the starter and think I have misread the instructions. Am I supposed to keep only 1/2 cup of the original starter and discard the rest? I have been removing 1/2 cup before adding new 😳.

It is quite bubbly though. Should I start again?

Bubbles sound like it’s working. I’d recommend the bake with jack recipe.

In the early days discard 50% before feeding. This is because if you didn't you'd have to feed more and more every day as it's gets bigger to feed all the live yeasts. You are just avoiding ending up being over run with it really. Once it's properly up and going you can just use all of it and feed the scrapings that's left in your jar.
For instance I use 100g every other day then feed 50/59 water flour for tomorrow's 100g. Just the scrapings left on the sides of the jar are enough now (but barrack doughbama here is nearly 4 now)
