Lockdown/WFH lunch - nailed it today!

For those struggling with endless boredom of WFH/lockdown lunches, especially when there's zero desire to cook.... I threw some tomatoes, a onion I'd cut into a few pieces, some garlic cloves and some olive oil into a roasting dish then made some couscous and mixed it all up with some feta. Delicious and easy. I've been sooooo bored of all food, it was nice to do something different from a sandwich/potatoe/salad at lunch.

That sounds really nice! And really easy too, my kind of 'cooking'!! Not had couscous for ages and forgotten how tasty it is, and filling too. Sick of sarnies and toast.

If you like halloumi that's also lovely chucked in a roasting dish with things like you did. Cut into chunks and it goes crispy on the outside and soft inside. Top the whole lot off with a dollop of houmous, hmm hmm.

I often do roasted veg with couscous and feta, that's good hot or cold. Especially with some pesto or balsamic

The thing is that roasted veg is something I do at various times for dinner. It just had never occurred to me for lunch. So weird. I did add balsamic too, you're right, makes it even yummier.
